This was a test recipe for upcoming Halloween...
Even the family member who does not like orange cake loved them.
I have converted them with this subtle orange cupcake and orange cream cheese icing.

These cupcakes are best made with fresh orange juice and rind.

The mixture is very fine and almost curdle like,
but do not be tempted to add more flour.

Once baked and cooling on a rack...

Mix up the cream cheese icing.

And once the cakes are completely cold,
generously pile on the cream cheese orange icing on top,
with a rind less wedge of orange to garnish.

Plate, serve and enjoy!
