This was a test recipe for the upcoming Halloween.
Even the family member who does not like orange cake loved them.
I have converted a basic cupcake recipe into these subtle orange cupcakes with orange cream cheese frosting.

These cupcakes are best made with fresh orange juice and rind.

Don't overfill your cupcake cases!

Once baked, let cool on a rack.

Mix up the cream cheese frosting.
And once the cakes are completely cold,
generously pile on the cream cheese orange frosting on top,
with a rindless wedge of orange to garnish.

Line a muffin cupcake pan with paper liners.
1. Cream the butter and sugar until pale and creamy.
2. Add the eggs, orange juice, and rind. Beat well.
It will look curdled.
3. Add the milk, flour, and baking powder.
4. Bake for 15 to 20 minutes.
Cool completely before frosting.
Orange Cream Cheese Frosting :
- Using electric beaters, beat the softened butter and softened cream cheese in a bowl until creamy.
- Add powdered sugar, orange juice, and the rind. Beat until it's smooth and creamy.
- Add a little milk (if needed) to adjust the consistency.
- Add an orange piece with the peel removed to the top of each cake.

Plate, serve, and enjoy.
They are melt-in-your-mouth delicious!
