Best Ever Creamy Tomato Soup

Homemade Tomato Soup
Tomato soup that is ready to eat in 20 minutes...
Tomato soup that's creamy without added cream...
Tomato soup that can be made ahead to save time for tomorrow.
Or make and freeze, then defrost and reheat for a really simple meal on the run.

Homemade Tomato Soup
Made from fresh ingredients.
(Though you can cheat if fresh is out of season and use pre-crushed Jar garlic, canned tomatoes and dry basil).
But in all honesty - FRESH IS BEST!

You make a roux sauce first. 
This is the 'creamy' secret!
Melted butter (or non-dairy substitute)
Plain flour added.
Basil and other flavourings.
Then milk or soy milk to make a thick sauce.


Then you puree your fresh or canned tomatoes.
And add to the roux sauce.
Heat.
Add salt and pepper to taste.


Homemade Tomato Soup
Serve topped with grated parmesan cheese and more chopped basil.
This has to be my most favourite tomato soup.
And even if you are not dairy-free,
