Pure Mandarin & Honey Jelly Lollies... ❥


Jelly Lollies
If you're looking for a healthier Halloween, party or everyday treat,
then these easy-to-make jelly lollies are the answer!

These are made with pure freshly picked and then squeezed mandarin juice.
I've also made the jelly lollies with orange juice.

 You need 2 cups of fresh juice.
Strain the juice in a sieve to remove pips and bits.
Place one cup into a small pot with 4 tablespoons of honey.
Make sure the honey is a mild flavour like clover,
as if you use strong honey it will overpower the citrus flavour.

 In a small bowl, sprinkle over the top the other 1 cup of juice and 6 Tablespoons of unflavoured gelatin powder.

 Let the juice slowly soak up the gelatin at its own pace.  DO NOT STIR IT.
This process is called 'bloom'.

Bring the remainder of the juice and honey in the pot to a medium heat .
Add the bloomed gelatin mixture.
Stir with a whisk until dissolved.
Set aside to cool.

 You will need small silicon moulds.

Place the cooled juice mixture in small jug lots to pour into the moulds.
(These are great fun for the kids to make!)

 Place on trays in the fridge overnight to set.


 The pure mandarin and honey jelly lollies keep well in a covered plastic container in the fridge.  And they don't stick together.

I'll be making these in Halloween moulds for sure,
as they are a huge hit with jelly lolly lovers...
As a bonus they are pretty to look at, yum to eat, as well as healthy!

How Easy Is It To Make Peanut Butter?

In blog land everyone else is making peanut butter!
And everyone says it's EASY!
And ya all know EASY is my friend...
so I decided to test the theory.
Off I went to Bin Inn bulk store...
purchased my roasted salted peanuts.
Got out my food processor, added my peanuts,
 pulsed and smashed those peanuts into little pieces.
One blogger said - it takes 5 minutes to make smooth peanut butter!
Well....
my food processor is so powerful - 
I am glad it has suction cups to stick it to the bench.
It literally takes off!
Yip - it is a BEAST!
And after 6 minutes at top speed I had smashed peanuts,
that did not quite resemble peanut butter.
Processed for another 2 minutes - hmmm no change.
So I am thinking - 
maybe we dry roast all the oil out of our peanuts in New Zealand.
USA you must have wonderful oily peanuts!
So in went two tablespoons of oil.
Another 3 minutes of full speed processing and I had an in between kind of crunchy and smooth peanut butter.
By this stage the noise of the 'BEAST' was doing my head in,
 so after a taste test, I decided it was good enough.
It took 11 minutes but I won the homemade peanut butter battle.
It is delicious.
When compared to a natural store bought peanut butter
that is available in New Zealand (in the same quantities), 
it's actually no cheaper to make at home.
But at least I can tick it off the list, and say I've done it.

Coconut Apricot Bars...


Forget about the chocolate content, and then you can consider this bar healthy, right?

Coconut Apricot Bars
Preheat oven to 160 Celsius
Line a 27.5cm by 18cm (about 11 x 7 inch size) slice pan with baking paper.
Melt 50 grams (1.8 ounces) of butter, 200 grams (7 ounces) of dark cooking chocolate and a half cup of honey in a large pot.
When melted add 2 1/2 cups cooking oats, 1/2 cup coconut and 1/2 cup diced apricots.
Combine mixture. 
 Press into a prepared slice tin  (size 19.5cm x 28.5cm) and bake for 30 minutes.
Cool completely.  
Refrigerate overnight then cut into bars.

You can cut into muesli-style bars as shown, or smaller squares...
You now have permission to indulge!
